THE SWEETS: FROM THE ARABS TO THE CONVENTS

Sugar, almond, pistachio, ricotta: the Arabs brought the ingredients, the cloistered convents the recipes, the Florios the pastry of the court. No other island in Europe has so long a tradition of sweets.
